How to Prepare Moi Moi (Nigerian Bean Pudding)

Ingredients

To prepare Moi Moi, you will need the following ingredients:

  • 2 cups peeled beans (black-eyed peas or brown beans)
  • 1 red bell pepper (tatashe)
  • 1 scotch bonnet (atarodo)
  • 1 medium onion
  • 1/4 cup vegetable oil or palm oil
  • 2 cubes of seasoning (Maggi or Knorr)
  • 1 teaspoon salt
  • 1 teaspoon ground crayfish (optional)
  • 1/2 teaspoon curry powder (optional)
  • 1/2 teaspoon thyme (optional)
  • 2 cups water or stock (for blending)
  • 1/2 cup boiled eggs, fish, or corned beef (optional filling)
  • Moi Moi wrappers (leaves, foil, plastic bowls, or cups)

Step-by-Step Preparation

Step 1: Soak and Peel the Beans

Start by soaking the beans in water for about 30 minutes to soften the skin. After soaking, rub the beans between your palms or blend them briefly to remove the skins. Rinse thoroughly, ensuring that all the skins are removed.


Step 2: Blend the Ingredients

Place the peeled beans in a blender. Add chopped onions, red bell pepper, and scotch bonnet. Pour in some water or stock to help the blending process. Blend everything until you achieve a smooth, thick paste.


Step 3: Mix the Moi Moi Batter

Transfer the blended mixture into a large bowl. Stir in vegetable oil, seasoning cubes, salt, and ground crayfish. To enhance the flavor, you can add curry powder and thyme. Mix thoroughly until the oil is fully incorporated. At this point, you may add boiled eggs, flaked fish, or corned beef for extra richness.


Step 4: Wrap or Pour into Containers

There are different ways to wrap Moi Moi before steaming. You can use Moi Moi leaves, foil, plastic bowls, or cupcake molds. If using leaves, wash them properly and fold them into a cone shape. For other containers, ensure they are clean and lightly greased. Pour the mixture into the containers, leaving some space at the top for expansion.


Step 5: Steam the Moi Moi

In a steaming pot, add some water and place a rack or some Moi Moi leaves at the bottom to prevent direct contact with the water. Arrange the wrapped Moi Moi inside the pot, ensuring they are positioned upright. Cover the pot tightly and steam for 45 minutes to 1 hour on medium heat. To prevent burning, check the pot occasionally and add more water when necessary.
